Spinach Salad with Homemade Maple Dijon Dressing

Ingredients
  • 9 oz. package baby spinach
  • 2 hard boiled eggs, diced
  • 4-5 baby portobello mushrooms, sliced
  • 1/2 red onion, diced
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts (glazed, optional)
  • 1/4 cup olive oil
  • 3 tablespoon pure maple syrup
  • 1 1/2 tablespoon apple cider vinegar
  • 1 1/2 tablespoon prepared dijon mustard
  • 3 small garlic cloves, minced

Combine first 4 ingredients, toss.
Whisk together last 5 ingredients and drizzle onto spinach mixture, toss.
Sprinkle cranberries and walnuts onto salad.
Serve immediately.


This is a great "bring to a party" salad, as the dressing can be made in advance and drizzled / tossed just before serving at your potluck, party, etc.
